The encounter between pork and onion is a successful one and this recipe will be a must for your dinners!
Put bacon in a vessel, cover with Marsala and marinate for approximately 30 minutes. In the meantime, clean the fillet from fat, rub with some salt and pepper and carefully wrap it in bacon slices. Pour oil and Marsala marinade in a pan suitable for oven baking, place the fillet and put in pre-heated oven at 200°C for 10 minutes, low the heat at 180°C and cook for approximately 15/20 minutes. Remove the fillets from the oven, cover with a tinfoil and let sit for 5 minutes. Cut it in slightly thick slices and serve with quenelles of Red Onion from Tropea jam.
